Over night oats

  • 1/2 cup of muesli (2 servings but it’s okay)
  • 1/2 vanilla honey greek yogurt
  • 1/2 cup of unsweetened vanilla almond milk
  • a palm full of fresh fruit 
    • I prefer berries because of their low sugar content and antioxidants
  • unsweetened coconut flakes

Using mason jars first layer oats followed by milk, topped with fruit, coconut and yogurt on top.  Make them at night so that the milk has time to ‘cook’ which is really just softening the oats.  This can be eaten warm or cold if necessary.  It’s bursting with flavor and color without being too filling.  Most of all it’s convenient.  

Avocado Toast

  • rye, sourdough or a hearty wheat sliced wheat bread (2 per person)
  • cherry tomatoes on the vine
  • 1 ripe avocado per person
  • a heap of fresh garlic, salt, paprika, accent, black pepper, cayenne pepper
  • bacon crumbles

Cut and season the avocado while the bacon is cooking.  Toast the bread while scrambling the eggs.  Cut up fresh fruit. As the eggs cook, spread the mashed avocado on top of the bread.  Then add the sliced miniature tomato slices and bacon that’s been crumbled or roughly chopped.  Cut toast into diagonal slices which equals 4 halves of avocado toast.  Add eggs to plated fruit, avocado toast and fruit. This meal is filling and exploding with color, texture and flavor. Enjoy!

Chiliquilesish Breakfast

  • Hard tortilla chips
  • enchilada sauce
  • Cheese
  • onion 
  • bell pepper
  • minced garlic
  • green onions
  • sour cream
  • Goya seasoning packet
  • black beans with bay leaves or and cinnamon

Simmer the canned black beans on low adding the garlic, cinnamon, salt and bay leaves using optional fennel seeds. Finely chop vegetables and saute in olive oil.  Turn down the skillet down to a low setting. Pour the red enchilada sauce in a skillet over vegetables adding garlic, Vegeta seasoning, black pepper salt.  Don’t forget to occasionally stir the black beans.  Turn off skillet and let cool slightly.  Dip the chips in the sauce mixture and spread loosely  in a cast iron skillet or any other oven safe cookware.  Sprinkle cheese on top and place in the oven on a low setting for 15 to 20 minutes.  Stir the black beans before making scrambled eggs.  Start to plate the food by adding the cheesy dipped tortilla chips topped with sour cream and green onions.  Then add the strained black beans followed by the eggs and it’s freaking delicious.  

Grab and Go Sausage Biscuits

  • 8 sausages of your choice
  • 1 can of biscuits
  • maple syrup
  • 5 large eggs
  • cheddar cheese

Pre heat oven to desired temperature for biscuits and cook.  Cut the biscuits in half on a piece of parchment paper and freeze them on a baking sheet.  Cook 8 sausages and put them to the side while scrambling 5 large eggs or 6 medium ones.  Add Accent to the eggs and cook lightly scrambled with preferred cheese.  Take out the biscuits which should be cold or at least hard but preferred frozen.  Place the sausage on the biscuits,  add a squeeze of maple syrup, then the eggs followed by the top of the biscuit.  Wrap each biscuit in plastic wrap or aluminum foil depending on your reheating preferences.  Place two biscuits each into a freezer ziplock bag so that you can grab and go.  If really hungry, you can eat two and if slightly hungry grab one with fruit of choice.
